A quick and easy recipe for egg muffins made in an air fryer.
Ingredients

- 6 eggs
- 1/2 cup diced bell peppers
- 1/2 cup chopped spinach
- 1/4 cup diced onions
- 1/2 cup shredded cheese
- Salt to taste
- Pepper to taste
Instructions
- Preheat the air fryer to 300°F (150°C).
- In a bowl, whisk the eggs.
- Add the bell peppers, spinach, onions, cheese, salt, and pepper to the eggs.
- Mix well until combined.
- Pour the mixture into silicone muffin cups.
- Place the cups in the air fryer basket.
- Cook for 12-15 minutes until the muffins are set.
- Let them cool for a few minutes before removing.
Notes
- Store leftovers in the fridge for up to 3 days.
- You can customize with your favorite vegetables.
- Try adding cooked bacon or sausage for extra flavor.
