Ingredients

- 1 cup Arborio rice
- 4 cups vegetable broth
- 1/2 cup grated Parmesan cheese
- 1/2 cup mozzarella cheese, diced
- 1/4 cup breadcrumbs
- 1 egg
- Salt to taste
- Pepper to taste
- Cooking spray
Instructions
- Cook Arborio rice in vegetable broth until creamy.
- Let rice cool, then mix in Parmesan cheese, salt, and pepper.
- Form rice mixture into balls and stuff with mozzarella.
- Roll balls in breadcrumbs and coat with cooking spray.
- Preheat air fryer to 375°F (190°C).
- Place arancini balls in air fryer basket and cook for 12-15 minutes until golden.
