Description

Delicious air fryer arancini balls made with risotto and cheese.


Ingredients

  • 1 cup Arborio rice
  • 4 cups vegetable broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, diced
  • 1/4 cup breadcrumbs
  • 1 egg
  • Salt to taste
  • Pepper to taste
  • Cooking spray

Instructions

  1. Cook Arborio rice in vegetable broth until creamy.
  2. Let rice cool, then mix in Parmesan cheese, salt, and pepper.
  3. Form rice mixture into balls and stuff with mozzarella.
  4. Roll balls in breadcrumbs and coat with cooking spray.
  5. Preheat air fryer to 375°F (190°C).
  6. Place arancini balls in air fryer basket and cook for 12-15 minutes until golden.
