Ingredients

- 1 pound shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko breadcrumbs
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- Set up a breading station with three bowls: one for flour, one for beaten eggs, and one for the coconut and breadcrumbs mixture.
- Season the shrimp with salt and pepper.
- Dredge each shrimp in flour, dip in egg, and coat with the coconut-breadcrumb mixture.
- Place the breaded shrimp in the air fryer basket in a single layer.
- Spray the shrimp lightly with cooking spray.
- Cook for 8-10 minutes or until golden brown and crispy.
- Serve hot with your favorite dipping sauce.
