Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 2 tablespoons curry powder
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup coconut milk

Instructions

  1. In a bowl, mix olive oil, curry powder, garlic powder, ginger powder, salt, and black pepper.
  2. Add chicken thighs to the bowl and coat them evenly with the spice mixture.
  3. Pour in the coconut milk and mix well.
  4. Preheat your air fryer to 375°F (190°C).
  5. Place the chicken in the air fryer basket in a single layer.
  6. Cook for 25-30 minutes, flipping halfway through, until chicken is cooked through.
  7. Let the chicken rest for a few minutes before serving.
