Ingredients

- 2 lbs chicken thighs, boneless and skinless
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup coconut milk
Instructions
- In a bowl, mix olive oil, curry powder, garlic powder, ginger powder, salt, and black pepper.
- Add chicken thighs to the bowl and coat them evenly with the spice mixture.
- Pour in the coconut milk and mix well.
- Preheat your air fryer to 375°F (190°C).
- Place the chicken in the air fryer basket in a single layer.
- Cook for 25-30 minutes, flipping halfway through, until chicken is cooked through.
- Let the chicken rest for a few minutes before serving.
Notes
- Adjust spice levels to your preference.
- Serve with rice or naan.
- Store leftovers in the fridge for up to 3 days.
