Air fryer egg bites are a quick and easy breakfast option. They are fluffy, flavorful, and packed with protein.

- 6 large eggs
- 1/2 cup cottage cheese
- 1/2 cup shredded cheese
- 1/2 cup diced vegetables (bell peppers, spinach, etc.)
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 270°F (130°C).
- In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth.
- Add shredded cheese and diced vegetables, and stir to combine.
- Pour the mixture into silicone molds, filling them about 3/4 full.
- Place the molds in the air fryer basket.
- Cook for 15-18 minutes or until the egg bites are set.
- Carefully remove the molds and let the bites cool for a few minutes before serving.
Notes
- Store leftovers in the fridge for up to 4 days.
- Reheat in the air fryer or microwave before serving.
- Experiment with different vegetables and cheeses for variety.
