Description

Air fryer egg bites are a quick and easy breakfast option. They are fluffy, flavorful, and packed with protein.


Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese
  • 1/2 cup diced vegetables (bell peppers, spinach, etc.)
  • Salt and pepper to taste

Instructions

  1. Preheat your air fryer to 270°F (130°C).
  2. In a blender, combine eggs, cottage cheese, salt, and pepper. Blend until smooth.
  3. Add shredded cheese and diced vegetables, and stir to combine.
  4. Pour the mixture into silicone molds, filling them about 3/4 full.
  5. Place the molds in the air fryer basket.
  6. Cook for 15-18 minutes or until the egg bites are set.
  7. Carefully remove the molds and let the bites cool for a few minutes before serving.

Notes

  • Store leftovers in the fridge for up to 4 days.
  • Reheat in the air fryer or microwave before serving.
