Ingredients

  • 1 cup grated zucchini
  • 1/2 cup grated carrot
  • 1/4 cup chopped onion
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a bowl, combine zucchini, carrot, and onion.
  3. Add flour, cornmeal, egg, salt, pepper, garlic powder, and olive oil. Mix well.
  4. Form small patties with the mixture.
  5. Place the patties in the air fryer basket in a single layer.
  6. Cook for 12-15 minutes, flipping halfway through.
  7. Remove and serve hot.
