Description
Crispy air fryer fritters made with vegetables.
Ingredients

- 1 cup grated zucchini
- 1/2 cup grated carrot
- 1/4 cup chopped onion
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1 egg
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a bowl, combine zucchini, carrot, and onion.
- Add flour, cornmeal, egg, salt, pepper, garlic powder, and olive oil. Mix well.
- Form small patties with the mixture.
- Place the patties in the air fryer basket in a single layer.
- Cook for 12-15 minutes, flipping halfway through.
- Remove and serve hot.
Notes
- Adjust seasoning to your taste.
- Store leftovers in an airtight container in the fridge.
- Reheat in the air fryer for best results.
