Easy and delicious Japanese recipes made in an air fryer.
Ingredients

- 1 cup of sushi rice
- 2 cups of water
- 1 tablespoon of rice vinegar
- 1 tablespoon of sugar
- 1 teaspoon of salt
- 200g of chicken thigh, diced
- 2 tablespoons of soy sauce
- 1 tablespoon of mirin
- 1 teaspoon of sesame oil
- 1 cup of mixed vegetables (carrot, bell pepper, broccoli)
Instructions
- Rinse the sushi rice under cold water until water runs clear.
- Combine rice and water in a pot, bring to a boil, then simmer for 20 minutes.
- Mix rice vinegar, sugar, and salt in a small bowl and stir until dissolved.
- Fluff the cooked rice and mix in the vinegar mixture.
- In a bowl, marinate diced chicken with soy sauce, mirin, and sesame oil for 30 minutes.
- Preheat the air fryer to 200°C (400°F).
- Add marinated chicken and mixed vegetables to the air fryer basket.
- Cook for 15 minutes, shaking the basket halfway through.
- Serve chicken and vegetables over sushi rice.
Notes
- Adjust cooking time based on the size of chicken pieces.
- Use any vegetables of your choice.
- For extra flavor, add chopped green onions as a garnish.
