Ingredients

Instructions

  1. Rinse the quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer for 15 minutes until liquid is absorbed.
  4. In a bowl, mix cooked quinoa, chopped vegetables, olive oil, garlic powder, salt, and pepper.
  5. Preheat the air fryer to 350°F (175°C).
  6. Place the mixture in the air fryer basket and cook for 10 minutes.
  7. Shake the basket halfway through cooking for even results.
  8. Serve warm.
