Ingredients
Scale
- 1 cup quinoa
- 2 cups vegetable broth
- 1 cup chopped vegetables (bell pepper, zucchini, carrots)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat and simmer for 15 minutes until liquid is absorbed.
- In a bowl, mix cooked quinoa, chopped vegetables, olive oil, garlic powder, salt, and pepper.
- Preheat the air fryer to 350°F (175°C).
- Place the mixture in the air fryer basket and cook for 10 minutes.
- Shake the basket halfway through cooking for even results.
- Serve warm.
