- 4 bell peppers
- 1 cup cooked rice
- 1 cup ground turkey
- 1 cup black beans, drained
- 1 cup corn
- 1 cup salsa
- 1 cup shredded cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat your air fryer to 360°F (182°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a bowl, mix cooked rice, ground turkey, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
- Stuff each bell pepper with the mixture.
- Place the stuffed peppers in the air fryer basket.
- Cook for 15-20 minutes until the peppers are tender.
- Sprinkle cheese on top and cook for an additional 2-3 minutes until melted.
Notes
- You can use any color bell peppers.
- Feel free to substitute ground turkey with ground beef or chicken.
