Ingredients

- 1 medium aubergine, sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
Instructions
- Preheat the air fryer to 190°C (375°F).
- In a bowl, combine sliced aubergine with olive oil, salt, pepper, garlic powder, and paprika.
- Toss until the aubergine is evenly coated.
- Place the aubergine slices in the air fryer basket in a single layer.
- Cook for 15-20 minutes, shaking the basket halfway through.
- Check for doneness. Cook longer if needed.
- Remove from the air fryer and serve hot.
Notes
- Adjust seasoning to your taste.
- For a spicier version, add chili powder.
- Store leftovers in an airtight container in the fridge.
