Ingredients

- 2 eggs
- 1 medium potato, diced
- 1 bell pepper, chopped
- 1 onion, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat the air fryer to 400°F (200°C).
- Mix the diced potato, bell pepper, onion, olive oil, salt, and pepper in a bowl.
- Place the mixture in the air fryer basket.
- Cook for 15 minutes, shaking halfway through.
- In the last 5 minutes, add the eggs directly to the basket.
- Cook until eggs are set and potatoes are tender.
- Serve hot.
