Instructions
- Preheat the air fryer to 375°F (190°C).
- Slice the eggplant into even rounds.
- In a bowl, mix olive oil, salt, pepper, garlic powder, and paprika.
- Toss the eggplant slices in the mixture until evenly coated.
- Arrange the slices in the air fryer basket in a single layer.
- Cook for 12-15 minutes, flipping halfway through.
- Check for desired crispness and adjust time as needed.
