Ingredients

- 2 cups of mixed vegetables (bell peppers, zucchini, eggplant)
- 1 cup of chickpeas, drained and rinsed
- 2 tablespoons of olive oil

- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 1 lemon, juiced
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a bowl, combine mixed vegetables and chickpeas.
- Add olive oil, garlic powder, oregano, salt, and pepper.
- Toss to coat evenly.
- Place the mixture in the air fryer basket.
- Cook for 15-20 minutes, shaking halfway through.
- Remove from air fryer and drizzle with lemon juice before serving.
