Ingredients

  • 2 cups of mixed vegetables (bell peppers, zucchini, eggplant)
  • 1 cup of chickpeas, drained and rinsed
  • 2 tablespoons of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste
  • 1 lemon, juiced

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a bowl, combine mixed vegetables and chickpeas.
  3. Add olive oil, garlic powder, oregano, salt, and pepper.
  4. Toss to coat evenly.
  5. Place the mixture in the air fryer basket.
  6. Cook for 15-20 minutes, shaking halfway through.
  7. Remove from air fryer and drizzle with lemon juice before serving.
