A moist and flavorful carrot cake made in an air fryer.
Ingredients

- 1 cup all-purpose flour
- 1 cup grated carrots
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the air fryer to 320°F (160°C).
- In a bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
- In another bowl, combine sugars, oil, and eggs. Mix well.
- Add grated carrots to the wet mixture.
- Combine dry and wet ingredients. Stir until just mixed.
- Fold in walnuts if using.
- Pour the batter into a greased air fryer-safe pan.
- Air fry for 25-30 minutes or until a toothpick comes out clean.
- Let cool before serving.

- Adjust cooking time based on your air fryer model.
- Serve with cream cheese frosting for added flavor.
