  2. Score the fat on the gammon joint in a diamond pattern.
  3. Mix apple juice, brown sugar, mustard powder, and black pepper in a bowl.
  4. Brush the mixture over the gammon.
  5. Place the gammon in the air fryer basket.
  6. Cook for 25-30 minutes, basting halfway through.
  7. Check the internal temperature; it should reach at least 75°C (167°F).
  8. Let it rest for 10 minutes before slicing.
